Although I've enjoyed baking for years, I always found baking bread to be intimidating, until I bought this book. I dove right in, and using their recipes had great results almost immediately. But I think one has to keep it in perspective. Their technique will not enable you to produce the same result as the best traditional bakeries in just five minutes a day. It's not possible to reduce to just a few easy steps a craft which has been two thousand years in development and which professionals spend a lifetime mastering.
However, following the technique of this book, I have produced bread which is almost as good as the best traditional bakeries (8.5 on a scale of 10), easily better than the mass produced commercial "artisan" breads at my local grocer, and dramatically better than a conventional supermarket loaf.

I bought this book because of an article in the New York Times that gave the basic bread recipe from this book. My experience with the basic recipe has been so satisfying that I have not yet ventured into the others in the book. It is definitely the easiest bread recipe I have ever tried, and the results are as tasty as any homemade bread I have eaten. This bread is my usual contribution to potlucks at church and work, and if there is any left, someone always wants to take it home.
A coworker to whom I gave a copy for Christmas came in and raved about the recipe for brioche, so it seems that the other recipes are also good.
The book is nicely produced with good illustrations, legible type, and binding that lies reasonably flat.
Anyone who wants to bake good bread at home should like this book.

I have just received the book after a considerable delay. I have looked through the book and find it very interesting . Can't wait to try some of the bread recipes. I think I am going to like using it.

I gave this book as a gift to my partner and was so inspired I mixed up the first batch of bread dough. We had bread with some soup last night and it exceeded any locally available "artisan bread". I have been baking for 30+ years and this was REALLY easy, minimal effort for excellent results.
